Dai Food

Dai food is specialised for its spicy and sour flavor with capsicum frutescens, corainder, and lemon juice as its main condiments.

Sapie

"Sapie" is a kind of seasoning made by Dai people living in Dehong. People take some liquid from certain part of the intestines of a just killed cattle, boil and filtrate it, and then mix it with salt, chili, monosodium glutamate, and beef mince. "Sapie"usually goes with rice noodles, or slices of meat. "Sapie" tastes alittle bitter or sour, but has a function of stimulating appetite and relievinginternal heat.

Baoshao

It is a special cuisine of Dai people. They use fresh banana leaves to wrap food mixed with seasonings, and then bake it on charcoal fire. They usually cook vegetables and meat and fish and shrimps in this way.

Rice Cooked in Pineapple

Wash and dunk rice. Cut off one end of apineapple and hollow it out. Then put rice into the pineapple and use the cut off end as a cover. Steam the pineapple. Pineapple rice is fragrant and sweet,with strong pineapple aroma. It also has a function of nourishing the blood and moistening the lung.

Grilled Fish with Citronella

This is a very famous Dai dish made out of a kind of local fish called "Luofei fish". Dai people usually cut the fish open, stuff it with coriander, chili and salt, bind it with citronella, and then grill it on a charcoal fire. When the fish is ready, they untie the burnt citronella and eat the fish, which is crisp, tender, delicious, having a distinctive flavor.

Stew the black bone chicken for several hours until it becomes soft. And then, slice the chicken. Addin coriander, chili, lemon juice, and salt. Mix them together. Very tasty and spicy ghost chicken is done!
